Full professor of Biochemistry at the University of Naples “Federico II, component of the Ph.D. Council on Biotechnologies of the University of Naples “Federico II”, President of the Italian Society of Biochemistry and Molecular Biology and member of the Science & Society Committee of the Federation of European Biochemical Societies. He carries out research activity at the Dept. of Chemical Sciences of the University of Naples “Federico II”. In the past he carried out research activity at the Dept. of Food Science, Dept. of Biochemistry and Biophysics, and at the Mental Health Research Institute of the University of Michigan (Ann Arbor, U.S.A). The use of the enzyme transglutaminase both to modify peptide and protein structure and activity, as well as to produce hydrocolloidal edible films, is currently the most important field of his researches. He published more than 150 articles on journals and books having worldwide distribution.
